What is the difference between a Nectarine and a Peach?
Not much. They are almost genetically identical except for one gene variant. A gene variant that results in peach fuzz. The main difference is the fuzz. Peaches have it. Nectarines don't. Both come in white and yellow varieties and can be used interchangeably in cooking and baking.
