Grown by Shady Maple Acres (you enjoyed their fantastic heirloom tomatoes this summer), these sweet potatoes are available in Red or Purple.
Japanese Purple: In general, purple sweet potatoes are mildly sweet and almost wine-like in taste. They tend to be much drier and starchier than traditional sweet potatoes. For this reason, purple sweet potatoes are often cooked for longer than traditional sweet potatoes.
The purple color is the result of an antioxidant called anthocyanin, the same antioxidant responsible for the color of red cabbage, red wine, and purple cauliflower.
Beauregard : Beauregards pale yellow to copper color skin conceals a deep orange interior. They are great for baking, frying, boiling, steaming, pureeing, and mashing.
Murasaki: Murasaki sweet potatoes are characterized by their deep purple skin and creamy white flesh, as well as their extra starchy texture. These sweet potatoes have a distinctive nutty flavor, with hints of brown sugar and vanilla. You can use Murasaki sweet potatoes much like you would russet potatoes. Their high starch content makes them ideal for roasting, either whole or cubed. Cooked on high heat, they get irresistibly crispy on the outside and soft and tender on the inside. You can also puree them for use in soups or stews.
