Apple Jack Cheese is semi-soft (like Monterey Jack) and has a smooth and supple texture. Its flavor is mild and sweet.  Named after its birthplace - Apple River Dairy, in Apple River, IL. Contrary to its name, Apple Jack does not in fact taste like apples, rather it complements and brings out the full fruity flavor of apples.
