Our 5-Year Aged Cheddar has a firm texture, a sharp, clean tanginess, and creamy sweetness on the finish. Cheddar gets most of its sharpness between three and five years.
What Happens When Cheddar Ages?
As Cheddar ages it releases extra moisture, really concentrating and focusing the flavors. The loss of moisture also changes the texture. The cheese will become crumblier and begin to form flavor crystals.
