Ultimate Muenster Grilled Cheese

by Thea Miller

We think Muenster is the unsung hero of grilled cheese. It has a silky melting texture; a rich, buttery flavor; and the perfect fat content for heating up without oiling off.

Our Muenster is made by Master Cheesemaker Steve Stettler, Decatur Dairy (Brodhead, WI), and is the Best in Class Winner at the 2022 World Champion Cheese Contest

Serves 4

8 (1/2 inch thick) slices sourdough bread or white bread
12 ounces Brennan's Muenster cheese, grated
4 tbs unsalted butter
Optional add-ins:
8 slices smoked bacon, cooked and broken into 1-inch pieces
8 slices baked ham
2 ripe tomatoes

Heat a large skillet over medium-low heat.

Place 4 slices of bread on work surface and generously butter the top of each. . Place 2 slices of bread- butter side down - in skillet.

Layer the bread with 1/4 of the cheese, 1/2 the bacon, tomato, or ham (if using), then another 1/4 of the cheese. Top with 2 of the remaining slices of bread - buttered side up. Cook, without pressing, until the bread browns and the cheese is slightly melted - about 5 minutes.

Turn the sandwiches over with a spatula. Cook slowly, adjusting heat as needed to melt the cheese completely before the sandwiches are browned - about 3-4 minutes. Repeat with the other 2 sandwiches.
