Swiss and Bacon Artichoke Onion Dip

Serving Size: Serves 8


2 Tablespoons butter

4 cups onions, coarsely chopped

1 large clove garlic, minced

1 teaspoon salt

1/2 teaspoon fresh ground pepper

4 cups Medium Aged Swiss cheese, shredded

8 oz Brennan’s Full-Cream cream cheese, softened

1/2 cup milk

2 cups canned artichoke hearts (not pickled), drained and coarsely chopped

5 slices thick cut bacon, cooked and crumbled

Preheat oven to 375 degrees F. In a large skillet, add butter and melt over medium heat. Add onions and garlic, sprinkle in salt and pepper. Stir occasionally and cook until onions are caramelized. In a large bowl, combine Swiss cheese, Cream Cheese and milk. Stir in onion and garlic mixture, artichoke hearts, and half of the cooked bacon. Pour into a greased baking dish. Sprinkle with remaining bacon. Bake for 30 minutes, or until cheese is melted and bubbly. Serve warm with tortilla chips or crackers.
