Sweet-And-Sour Red Cabbage

1/4 cup (1/2 stick) butter
12 lb (about 12 cups) red cabbage, thinly sliced
6 Tablespoons brown sugar
1/2 sweet onion, peeled & sliced
1/2 apple, like Granny Smith, peeled and chopped
2/3 cup Wine Country Kitchens Balsamic Vinegar
to taste salt and pepper
Great with grilled pork chops and mashed potatoes.
Melt butter in a large pot over medium heat. Add cabbage and saute until slightly wilted, about 5 minutes. Add sugar; toss to coat evenly. Add vinegar. Reduce heat to medium-low; simmer until cabbage is tender, stirring often, about 30 minutes. Season to taste with salt and pepper.
