Sweet and Sour Cabbage Slaw
Serving Size: Serves 6
1/4 cup Brennan’s Cherry Honey Vinegar
1/4 cup Extra Virgin Olive Oil
1/4 cup water
2 1/2 teaspoons coarsely cracked pepper
to taste salt
1/4 teaspoon dried thyme
1 medium head (1 lb) into about 10 cups red cabbage, quartered, cored and thinly sliced
1 small (about 1 cup) red onion, halved, thinly sliced
This flavorful side dish is great for picnics as a side dish to chicken or pork.
Combine vinegar, water, pepper, thyme and salt in a large bowl. Mix well. Add cabbage and onion and toss until well- coated.
Let it chill for a couple of hours to meld flavors.
Serve at room temperature.
