Sumo, Pomegranate and Pumpkin Seed Salad
Sweet, savory, salty and crunchy= a delicious salad
Serves 4 as a first course
Ingredients
12 ounces spring greens, baby spinach or arugula (whatever your favorite is!)1 Sumo Orange, peeled and sectioned
1/2 cup pomegranate arils
2 Tablespoons freshly squeezed lemon juice
2 tablespoons extra virgin olive oil
Kosher salt and freshly ground black pepper
3 ounces soft goat cheese or Feta
1/3 cup pepitas or Superseedz
Directions
Add greens, orange sections and arils to a large bowl. Toss with lemon juice, olive oil, salt and lots of pepper. Taste for seasoning and adjust as needed.
To serve, crumble the cheese over the salad and sprinkle pumpkin seeds on top.
