Strawberry Salsa with Avocados
Serving Size: Serves 4
1 fresh Serrano or Jalapeno chili
1 cup finely chopped strawberries
1/4 cup finely chopped white onion
1/2 teaspoon fresh lime juice
1/4 teaspoon salt
1/2 teaspoon sugar, if desired (depends on the sweetness of the strawberries and your taste)
2 firm-ripe avocados

A fun take on a classic dish. If you like your salsa spicier, add an extra pepper! Serve with Brennan's Tortilla Chips.
Wearing rubber gloves, remove stems, seeds, and ribs from chili and chop fine. In bowl stir together chili and remaining salsa ingredients, except avocados. Salsa may be made several hours ahead and chilled, covered. Before serving, halve avocados, removing pits, peel and cube into Â½ pieces. Pile in the center of salsa and serve.
