Spinach Pomegranate Salad with Apples and Walnuts
Serving Size: Serves 4
4 cups baby spinach leaves
1 apple, cored and chopped
1/3 cup pomegranate seeds
1/3 cup walnuts chopped and toasted
4 slices bacon, cooked and crumbled
2 ounces blue cheese, crumbled
1/2 cup pomegranate Juice, like smart juice
1 Tablespoon WCK Balsamic Vinegar
1 teaspoon Dijon Mustard
1 teaspoon honey
1/2 cup vegetable oil
to taste salt and freshly ground black pepper

This colorful salad is a tasty fall /winter side dish.
Put first six ingredients in a large bowl.
Make dressing. In a medium bowl, whisk together pomegranate juice, vinegar, mustard and honey. Slowly drizzle in oil, whiskey constantly, until its all incorporated. Season to taste with salt and pepper.
Yields: 1 ¼ cups.Toss salad with 1/3 cup of dressing and reserve the rest for later.
