Smokey Corn and Jalapeno Dip

1 jar Brennan’s Corn Relish

1 cup fresh or frozen corn

2 jalapeno peppers

1/2 cup mayonnaise

1/2 cup sour cream

1 cup Cheddar Cheese, shredded

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon freshly ground black pepper

This flavorful dip is great game day snack. Serve with crackers or potato chips.

Preheat oven to 350 degrees. Roast the jalapenos until blackened, about 5 minutes.  Let cool.  Seed and mince the peppers.In a large mixing bowl, mix corn relish, corn, jalapenos, sour cream cheese, until well combined.  Add smoked paprika, salt and pepper.  Bake at 350 degrees until bubbly.  Serve with crackers or potato chips.
