Peach Caprese Salad

Peach Caprese Salad

Light and refreshing salad for a hot summer day. 

Ingredients
8 ounces small mozzarella balls
1 cup cherry tomatoes, halved
1/4 cup Bear Pond Farms or Elki Pesto 
4-6 cups spring greens mix
2 avocados, thinly sliced
4 peaches, pitted and sliced
Delallo or Di Bruno Bros Balsamic Glaze
Salt and Pepper, to taste

 

Directions

Toss the mozzarella balls and cherry tomatoes in the pesto. 

Arrange spring greens in large salad bowl. Top with tomato and pesto mix, sliced avocados, and slice peaches. Season with Salt and pepper and top with balsamic glaze.
