Pasta with Blue Cheese, Tomatoes & Basil

Adapted By Brennan's 27 Sep 2018

Serving Size: Serves 4-6

2 large (about 1 1/2 lbs) tomatoes

1 cup (6 oz) Crumbled Blue Cheese

1/4 cup chopped fresh basil

1/4 cup green onion, sliced

1/4 cup sun-dried tomatoes packed in oil, drained

3/4 pound  pasta, of your choice

to taste fresh ground pepper

1/2 cup pine nuts, toasted

Adapted From: the Blue Cheese Course

This quick and easy pasta is packed with flavor. If you want a meatier meal, substitute four slices crisply cooked bacon, crumbled.

Core the tomatoes: coarsely chop them saving the juices (you should have about 4 cups). Put the tomatoes and juice into a large bowl along with blue cheese, basil, green onion and sun-dried tomatoes. Cook the pasta according to directions. Drain pasta and immediately add to tomato mixture. Toss until cheese melts and coats pasta. Season with pepper. Top with pine nuts and serve.
