Pancetta Crisps with Goat Cheese and Pear

16 thin slices pancetta

freshly ground black pepper

16 teaspoons (from 5 oz log) soft, fresh goat cheese, plain or cranberry flavored

2 very ripe pears, halved, cored, and cut into 1/4 inch thick slices

fresh thyme leaves

fresh lemon juice

Pancetta is like Italian Bacon. You know what they say, Bacon makes everything better.

Preheat oven to 450F. Place pancetta slices in a single layer on large rimmed baking sheet. Sprinkle with pepper. Bake until golden, about 10 minutes. Using spatula, slide pancetta crisps onto a platter. Top each with 1 teaspoon goat cheese and 1 pear slice. Sprinkle with thyme and serve.

Tip: Sprinkle fresh lemon juice on the pears to keep them from browning.
