How to Build a Sausage Board

Fall is in the air and we're craving heartier fare. What better way to celebrate autumn than a sausage board that's perfect for tailgates and Oktoberfest celebrations.  Beer and Cider pairing picks below!

How to start building your Sausage Board
Begin by choosing your surface. A wood cutting board works great or you can spread out heavy parchment on your table. Then, you will want some smaller bowls for your condiments and items like cornichons or sauerkraut.

You may position these bowls initially to establish a layout or decide to insert them later.  Constructing a sausage board should be fun, so feel free to experiment with it!

Ingredients:

  • Brennan's Bratwurst, cooked
  • Brennan's Dragonwurst, cooked
  • Hard Salami, like Driftless Provisions Saucisson Sec or Brennan's Beef Summer Sausage
  • Three Little Pigs Cornichons
  • 2-3 Cheeses (Brick, Swiss, Havarti, Blue, Brie)
  • Cracovia Sauerkraut
  • Mustard selection ---- PS Seasonings Bier Hall Stone Ground Mustard, Brew City Garlic Brown Mustard, Terrapin Ridge Pecan Honey Mustard, East Shore Mustard or Brownwood Farms Famous Kream Mustard
  • Martin's Pretzels

Beer and Cider pairings, see below*

Directions:

Arrange all of your ingredients on the cutting board and nestle your bowls of condiments. Don't forget about spoons, toothpicks, cheese knives and tongs.

Enjoy!

Brock's Beer and Cider Picks

The classic Paulaner Festbier is the traditional beer served at the Munich Oktoberfest - crisp, bready and refreshing. Delta Beer Lab is a Marzen style Oktoberfest brewed right in Madison - malty, biscuity and caramely. Each has their fans, but you can't go wrong with either when pairing with classic Oktoberfest charcuterie. If you prefer wine or cider, we recommend trying the Oak Aged Cider from Island Orchard Cidery in Door County. Sweet-tart apples meet cream and buttered brioche from the oak aging - perfect flavors to get you in that fall mood.
