Grilled Turkey and Cheddar Sandwiches with Mango Chutney

2 cups grated sharp cheddar

1/4 cup finely chopped fresh cilantro

1/2 cup Mango Chutney

8 slices thick bread, like sourdough

12 oz sliced turkey breast

1 Tablespoon unsalted butter, melted

1/8 teaspoon ground cumin


Easy and delicious, perfect for lunch today!

Heat a nonstick grill pan over medium-high heat. While the press is heating, combine the cheese and cilantro in a small bowl and stir until well blended. Spread the chutney on one-half of each of the bread slices. Top with the turkey. Spoon the cheese mixture over the turkey. Combine the melted butter and cumin; brush on both sides of the sandwiches. Put the sandwiches in the grill pan and top with another skillet to press sandwiches down, and cook until browned and crisp, 3 to 6 minutes, flipping sandwiches over once first side is brown. Carefully remove from the pan and serve.
