Gold Nugget & Strawberry Salad with Poppy Seed Dressing

Serves 4

Adapted from Live love and good food.


6 tablespoons olive oil
5 tablespoons honey
1/3 cup apple cider vinegar
1 tablespoon poppy seeds
1 tablespoon mayonnaise
1/2 teaspoon onion powder
3/4 teaspoon kosher salt
3/4 teaspoon dry mustard
3 cups Romaine lettuce, torn into pieces
3 cups Spring mix salad greens
1 cup strawberries, sliced
2 Gold Nugget Mandarins, peeled and segmented
1/2 small red onion, thinly sliced
1 cup Feta cheese, crumbled
1/2 cup rice noodles or sliced/slivered almonds

Poppy Seed Dressing
Add all ingredients to a blender and pulse for 15-20 seconds until emulsified and creamy. Store any leftovers in the refrigerator.
Toss all salad ingredients except for rice noodles/almonds and Feta cheese together in a large bowl. Divide among serving plates and drizzle with Poppy Seed Dressing. Sprinkle each serving with Feta cheese and rice noodles. Serve immediately
