Easy Fresh Fruit Tart

1 Shortbread Tart Shell
1/2 cup Brennan’s Apricot Spreadable Fruit or Preserves, other flavors work
1 Tablespoon water
8 oz cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla
3 cups Brennan’s Fresh fruit: like strawberries, kiwi, blueberries, raspberries, pineapple, peaches, nectarines
So simple and elegant looking, you will make it all the time. You can mix things up by swapping out different seasonal fruit.
Heat preserves and water in small saucepan over medium heat until the liquid is melted. (You can also melt in the microwave.)
With a pastry brush, spread a thin layer over the bottom and sides of the crust to keep the crust from getting soggy. Let the crust sit for 20 minutes. Combine filling ingredients and mix with blender until smooth. Spread onto crust.
Top with fresh fruit. With a pastry brush, spread a thin layer on top of the fruit.
