Don’t Miss The Swiss Burger

Serving Size: makes 8 kid servings and 4 adult burgers.
Ingredients3 1/2 pounds lean ground beef
1 teaspoon salt
1 teaspoon pepper
1 cup Brennan’s Medium Swiss or Aged Swiss, grated
12 hamburger buns, lightly toasted
24 slices bacon, cooked
Cracovia Sauerkraut, drained
These are the burgers for fans of strong, old-world flavors. Serve with potato salad or coleslaw, and, of course, a cold beer. This recipe makes 8 kid-portioned burgers and 4 adult burgers. Adjust the recipes based on your count.
Mix first 3 ingredients in large bowl until just blended. Shape half of meat mixture into eight 1/2-inch-thick patties. Shape remaining meat mixture into four 1-inch-thick patties. (Can be made 8 hours ahead. Cover and chill.)
Prepare barbecue (medium-high heat). Grill patties to desired doneness, topping with cheese for last minute of cooking, about 6 minutes per side for medium-rare1-inch thick patties. Place burgers on bottom halves of buns and top with bacon, sauerkraut and mustard and the top of the bun. Enjoy!
