Curried Chicken Salad
Serving Size: Serves 4
2 Envy Apples
2 cups cooked and shredded chicken breast
1/2 cup cucumber, diced
1/2 cup raisins or craisins
1/4 cup green onions, thinly sliced
1 cup plain yogurt
2 Tablespoons Mango Chutney
1 teaspoon Curry powder
1 bunch fresh flat-leaf parsley or watercress, rinsed
1/4 cup chopped peanuts, cashews or pecans

Savory, crunchy, sweet… there’s a lot going on in this tasty salad. Great for lunch or brunch
Core and dice apples into 1/2-inch cubes. Combine with chicken, cucumber, raisins and green onions in a large bowl. Prepare Spicy Yogurt Dressing by stirring yogurt, chutney and curry powder together thoroughly in a separate bowl.
Add to chicken mixture and combine thoroughly. To serve, divide watercress among serving plates. Arrange chicken salad mixture over watercress and garnish with chopped peanuts.
