Cilantro- Topped Roasted Salmon

Ingredients

non-stick cooking spray

4 (about 2 lbs total) salmon fillets

4-6 Tablespoons Bear Pond Farms Cilantro Pesto

2 tomatoes, cut in chunks

Description
This salmon is flavorful and great paired with rice and black beans

Preparation
Preheat the oven to 400°F.  Spray baking pan with cooking spray and place the salmon pieces skin-side down. Spread Cilantro Pesto on the salmon, cover with the chopped tomatoes and season with salt and pepper. Bake uncovered for 15-18 minutes.
