Bruschetta with Herbed Ricotta
Serving Size:Serves 6-8
1 French Baguette
1/2 cup Brennan’s Cellars Extra Virgin Olive Oil
15 oz ricotta cheese
2 Tablespoons dried herbs, like basil and oregano
2 pints grape or cherry tomatoes
coarse salt, like kosher or sea salt, to taste
Fresh cracked black pepper, to taste

This easy appetizer is quick to make & delicious.
Slice bread on the diagonal. Brush both sides with Extra Virgin Olive Oil. Toast slices in the broiler in your oven or in a toaster oven. Be careful not to burn. Remove from oven and cool. Clean and dry the tomatoes, then slice in half.
Spread each slice of bread with ricotta cheese and sprinkle with the herb of your choice. Toss the tomatoes with 1/4 cup of olive oil, salt and pepper (to taste), then spoon on top of the ricotta and serve.
