Broccolini-Cheddar Melts

Ingredients
12 broccolini stalks (Asparation), cut into 4 inch length or 12 broccoli florets
3 Tablespoons mayonnaise
1-2 teaspoons Dijon mustard to taste
4 large (3 x 5 inch) slices rye bread
4 thin red onion slices
1 cup (packed) shredded sharp cheddar cheese

Description
Serve these delicious sammies with slices of pears and apples, German potato salad and Cracovia Red Cabbage Salad
Preparation
Preheat broiler. Steam broccolini until just tender, about 5 minutes. Transfer to paper towels and pat dry. Mix mustard and mayo together in small bowl. Broil bread on baking sheet until lightly toasted, about 1 minute per side. Spread top side of each break slice with mayo/mustard combo. Top each with onion slice, broccolini, and cheese. Broil until cheese melts and browns about 2 minutes.
