Brennan’s Cherry-Berry Parfait
Serving Size: Serves 4
2 cups Bing cherries, pitted and halved
2 cups strawberries, blueberries or raspberries or a combination
1/2 cup (4 oz) mascarpone cheese
1/2 cup heavy whipping cream
3 Tablespoons, or to taste confectioner’s sugar (powdered)
1/2 teaspoon vanilla extract
fresh mint for garnish (optional)
This colorful fruity sweet treat makes a great summertime dessert. The parfaits can be made several hours before serving. Cover and store in the refrigerator.
Combine mascarpone and heavy whipping cream, sugar and vanilla in a bowl and beat with an electric mixer until soft peaks just form.
Layer the berries and the cream mixture in 4 parfait glasses. Garnish with mint, if desired.
