Brennan’s Black Bean & Corn Bacon Burgers
Serving Size: Serves 6
5 Tablespoons Brennan’s Black Bean and Corn Salsa
1/4 teaspoon Cajun Seasoning
1 pound lean ground beef
1/4 cup unseasoned bread crumbs
1 pound lean bacon, cooked and drained
6-8 slices cheddar or gouda cheese
1 sweet onion, sliced 1/8 inch thick
4 Kaiser or hamburger rolls, split
freshly ground black pepper, to taste
Serve these flavorful burgers with tortilla chips!
In a small bowl, combine egg, salsa and Cajun seasoning. Combine egg mixture with beef and bread crumbs mix until well blended. If mixture is too wet, add more breadcrumbs, and chill for 20 to 30 minutes.
Shape into patties and place on preheated grill. In the last minute of cooking, top with cheese, bacon, and onion. Remove carefully from grill and allow to cool. Brush inside of each roll with salsa and serve.
