Blueberry Spinach Salad with Sweet Balsamic Dressing

Serves 4. Adapted from Blue Bowl Recipes

Ingredients

Salad
3 cups fresh spinach, 3 ounces
1/2 cup pecans, chopped
1/2 cup dried cranberries (fresh strawberries work here, too. Just dice up)
1/2 cup feta cheese
1/2 cup fresh blueberries

Honey Balsamic Dressing
1 Tablespoon Extra Virgin Olive Oil
1 Tablespoon water
3 Tablespoon Wisconsin Honey
2 Tablespoon Balsamic Vinegar
Salt and Pepper, to taste

 

Directions

Make the Salad: Toss all salad ingredients together.
Make the dressing: Add all dressing ingredients to a mason jar and, with the lid on tight, shake well.
Pour the dressing on right before serving
