Asparagus with Fresh Mozzarella
Serving Size: 4
1 pound Asparagus Spears, thin or large cut in half
4oz Fresh Mozzarella, cut or torn in pieces
to taste salt
to taste pepper
1/2 teaspoon grated lemon peel
A tasty side dish with fish, chicken or beef.
Break off woody ends of asparagus. Rinse and drain.
Place in a steamer basket in a large skillet. Add enough water to come just below the bottom of the basket. Bring to a boil. Place asparagus evenly in a steamer basket. Cover. Steam for 2 minutes.Transfer asparagus to a small baking pan. Top with cheese. Season with salt and pepper. Broil4 inches from heat for 1 minute or until cheese melts. Top with grated lemon peel.
