This colorful fruity sweet treat makes a great summertime dessert. The parfaits can be made several hours before serving. Cover and store in the refrigerator.
Ingredients:
2 cups Bing cherries, pitted and halved 2 cups strawberries, blueberries or raspberries or a combination.
Cream ½ cup (4 oz) mascarpone cheese ½ cup heavy whipping cream 3 tablespoons confectioner's sugar (powdered), or to taste ½ teaspoon vanilla extract Fresh mint, for garnish (optional)
Preparation:
Combine mascarpone and heavy whipping cream, sugar and vanilla in a bowl and beat with an electric mixer until soft peaks just form.
Layer the berries and the cream mixture in 4 parfait glasses. Garnish with mint, if desired.
