Bring a pot of water to a boil, turn back heat, and gently heat through cheese tortellini. Meanwhile, whisk together Pepperoni Flavored Pesto and vinegar. Set aside.
Drain pasta and place in large bowl. Add green onions and chopped tomato. Add pepperoni. Add pesto-vinegar dressing. Finish with the addition of ½ cup tightly packed fresh, chopped arugula or spinach leaves. Toss ingredients to blend.
