Pancetta Crisps with Goat Cheese and Pear

Pancetta is like Italian Bacon. You know what they say, Bacon makes everything better.

Ingredients:
    16 thin slices pancetta
    Freshly ground black pepper
    16 teaspoons soft, fresh goat cheese (from 5 oz log) plain or cranberry flavored both work well.
    2 very ripe pears, halved, cored and cut into ¼-inch-thick slices
    Fresh thyme leaves
    Fresh lemon juice


Preparation:

Preheat oven to 450F. Place pancetta slices in a single layer on large-rimmed baking sheet. Sprinkle with pepper. Bake until golden, about 10 minutes. Using spatula, slide pancetta crisps onto platter. Top each with 1 teaspoon goat cheese and 1 pear slice. Sprinkle with thyme and serve.

Tip: Sprinkle fresh lemon juice on the pears to keep them from browning.
