Brennan's Easy Quesadilla

Serves 4-6 » Adapted from FoodNetwork.com

Add leftover chicken or steak for a great and easy dinner idea.

Ingredients:
    4 ounces of Monterey Jack, plain and flavored
    8 corn tortillas
    ½ cup of your favorite Brennan's salsa
    ½ cup sour cream
    Cut up leftover chicken or steak (optional)


Preparation:

Spread 1-ounce cheese on a tortilla. Add chicken or steak, if desired. Top with another tortilla and place in a nonstick skillet over medium-high heat. Cook until the bottom is lightly toasted, about 2 minutes. Turn over and cook until the cheese is melted and the second side is slightly toasted. Transfer to a plate and keep warm. Repeat with the remaining tortillas and the remaining cheese to make 4 quesadillas altogether. Cut each into quarters and serve with salsa and sour cream.
