This salsa is great with grilled chicken or fish. Also, don't be afraid to try substitutions. Swap out the mango or papaya for peaches or nectarines
Ingredients:
1 mango, peeled and cut into ½-inch dice 1 papaya, peeled, seeded, and cut into ½-inch dice 1 pint strawberries, hulled and quartered 2 tablespoons sugar, depending on the ripeness of the fruit and your taste 1 red Serrano or Jalapeno chili, seeded and minced (wear rubber gloves) 2 tablespoons minced fresh mint
Preparation:
In a bowl stir together the mango, the papaya, the strawberries, the sugar, and the pepper. Let the mixture stand for 10 minutes, and stir in the mint.
