Serving Size:makes 8 child sized burgers and 4 adult burgers.


  • 3 1/2 pounds lean ground beef
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 cup Brennan's Medium Swiss or Aged Swiss, grated
  • 12 hamburger buns, lightly toasted
  • 24 slices bacon, cooked
  • Cracovia Sauerkraut, drained
  • Brennan's Amber Beer Mustard or Dusseldorf Mustard


This is the burgers for fans of strong, “old world” flavors. Serve with potato salad or coleslaw, and, of course, a cold Brennan’s Golden Pils. This recipe makes 8 child sized burgers and 4 adult burgers. Adjust the recipes based on your count.


Mix first 3 ingredients in large bowl until just blended. Shape half of meat mixture into eight 1/2-inch-thick patties. Shape remaining meat mixture into four 1-inch-thick patties. (Can be made 8 hours ahead. Cover and chill.)

Prepare barbecue (medium-high heat). Grill patties to desired doneness, topping with cheese for last minute of cooking, about 6 minutes per side for medium-rare1-inch thick patties. Place burgers on bottom halves of buns and top with bacon, sauerkraut and mustard and the top of the bun. Enjoy!
