Pancetta Crisps with Goat Cheese and Pear

Serving Size:Makes 16


  • 16 thin slices pancetta
  • freshly ground black pepper
  • 16 teaspoons (from 5 oz log) soft, fresh goat cheese, plain or cranberry flavored
  • 2 very ripe pears, halved, cored, and cut into 1/4 inch thick slices
  • fresh thyme leaves
  • fresh lemon juice



Pancetta is like Italian Bacon. You know what they say, Bacon makes everything better.


Preheat oven to 450F. Place pancetta  slices in a single layer on large-rimmed baking sheet. Sprinkle with pepper. Bake until golden, about 10 minutes. Using spatula, slide pancetta crisps onto platter. Top each with 1 teaspoon goat cheese and 1 pear slice. Sprinkle with thyme and serve.

Tip: Sprinkle fresh lemon juice on the pears to keep them from browning.
