Our Raspberry Honey Vinegar would work, too. Serve with a side of pasta or rice and grilled asparagus.
Preheat broiler or grill. Combine vinegar, shallots, olive oil and salt and pepper. Whisk to blend. Marinate salmon in the mixture for approximately 45 minutes.
If broiling, broil in marinade, until cooked thru. About 5 minutes depending on thickness.
If grilling, make individual foil packets with salmon and marinade, divided, and grill to cooked thru, About 5 minutes, depending on thickness.
Garnish with fresh chives. Serve
