White Cheddar and Beer Potato Soup

Serving Size:Serves 6


  • 1 8.7 oz White Cheddar Potato Soup Mix
  • 4 cups chicken or vegetable broth
  • 1 bottle Brennan's Dark Amber Beer
  • 4 slices bacon, diced
  • 1 Tablespoon parsley, chopped
  • to taste salt and pepper
  • For extra cheesiness, add 1 cup shredded vintage Irish cheddar cheese!


A delicious and filling way to celebrate St. Patricks Day! Serve with crusty bread for a hearty meal!


Combine broth and beer in a soup pot, then whisk in the soup mix. Stirring frequently, bring to a boil. Lower heat and simmer. 

Chop up bacon into bite-size pieces and brown in a frying pan. Drain on paper towel and then add to soup. (If adding extra cheese, put it in now so it can melt)  

Simmer for 20  minutes or until vegetables are tender. Before serving, add parsley and salt and/or pepper as desired.
